I suffer quite badly from wine headaches, so over the years, I've become quite paranoid about what I drink (Vodka mixers only actually). However, I've been told that you can brew mead that doesn't cause this affect, so I'd like to try. Since no-one can decide what causes the 'wine headache', I was wondering what stuff definitely doesn't. Are there varities of yeast that are particularly non-alllergenic? How about yeast nutrient, sterilizers, and the various acids suggested? I'd rather be too conservative than get it wrong, but I'm not sure I have the patience for a fully traditional mead!

I rarely get headaches/hangovers. One of my uncles told me years ago never to drink alcohol on an empty stomach and always take five aspirins before you go to sleep. Vodka is the only alcohol of which I am aware that does not need to be aged. Aging beyond fermentation improves the character of wine and mead - and to some extent beer also. I would expect immature alcoholic beverages to cause headaches/hangovers in most people. My father was a Medical Doctor. He told me years ago that drinking very sweet alcoholic beverages as main alcohol intake was one source of hangovers.
