A Vegetarian Atkins diet?

Question:
The guy I'm renting my house from lost a lot of weight on the Atkins diet, and has suggested I look into it (I'm about 300 lbs, 6' 1.5). I'm actually a vegetarian, although a poor one at that considering my prime diet is chips, pizza, and cheese sandwiches! So I'm wondering if anyone has run across a vegetarian version of the Atkins diet program?

Answer:
I don't think you should have too much of a problem bringing your weight down comfortably on the Atkins diet by being a vegetarian. If you are a pizza lover, no problem, it is easy to make a vegetarian pizza on Atkins, the only difference will be the crust and how you make it. Cheese sandwiches are a breeze also with the Atkins' bread recipe. The Chips will become pork rinds and that should be no problem, there good with cream cheese and dips made out of chopped veggies & sour cream. Now add some scrambled eggs in the morning. I like scrambling them with small chunks of tofu -- that will increase your protein intake. Mentioning protein, getting sufficient intake of a variety of protein is where the problem is for an Atkins vegetarian -- eggs & tofu are great but just a tad boring. Another suggestion is Ionized protein powder from which you can make shakes, puddings and things like fantastic pancakes & waffles so along with exercise you can build your lean body mass. Now add a bunch of fresh salad type veggies, some berries with heavy cream and a variety of nuts (trying for the higher fibre, lower carb ones) and you got yourself a diet regimen that you may very well feel comfortable with and achieve your ideal weight range.
