Can anyone lease answer several question about Child Diabetic Diet for me?

My 6 years old daugter has been recently diagnosed IDDM Type I. I currently looking for alternative treatments. A naturopath recommended me the following actions: - avoid any kind of cow milk product; - supplements diet with oligoelements like zinc, nickel, cobalt and chrome; - Diet: -variety of complete fibers (e.g. whole wheat bread, not with reconstited flour) -low in carbohydrate -soja and rice milks -fruit & vegetable from biological soils, which are much richer in oligo-elements -variety of nuts -low fat meats (e.g. fish, chicken, etc.) -etc. I do believe that such changes in diet may cure a type II diabete since a type II is more or less due to a bad and overloaded diet. In fact many studies proves that a rich in fiber diet can eliminate the need to take insulin for IDDM type II. However, IDDM type I would come more from a body immune reaction: lymphocytes destroys the pancreatic cells until they are completely disappeared. My daugter's endocrinologist said that a cure as described above will probably help increase duration of the (about one year) normal remission period generally observed after a few weeks of insulin treatment. My goal is to extend my daugter's remission period forever! The removal of cow milk product may prpobably help since some theories are seriously questionning the cow milk as an agent responsible in the development of IDDM type I. Q-1 Does anybody knows about a real case of complete long term remission of a young child diabete (Type I) by applying the above, or any other treatment? Q-2 Does anybody knows about experimental research treatments using immunosupressives drugs (just like those used in transplants) to weaknen the action of the lymphocytes (or eliminate) that are attacking beta cells of the pancreas? Q-3 Is homepathic medicine can help replace the body immune system in the right track? Q-4 Is a 6 days fast (1day per year of age) would help, and by which mechanism? Your help is really appreciated

Much processed food has milk products hidden (casein, for instance), and food at most restaurants have milk products (except Asian restaurants). -low in carbohydrate -soja and rice milks -fruit & vegetable from biological soils, which are much richer in oligo-elements -low fat meats (e.g. fish, chicken, etc.) I see a bit of a problem with this combination. It's ok for a vegetarian to avoid milk products, but animal protein will pull some of the calcium out of the bones, and without milk it may be hard to replace it. If you limit animal protein, then it's hard to stay low in carbohydrate. Maybe that was supposed to be low in simple carbohydrates, but fruit is high in simple carbs. -variety of nuts It's possible that something in almonds helps prevent cancer. My daugter's endocrinologist said that a cure as described above will probably help increase duration of the (about one year) normal remission period generally observed after a few weeks of insulin treatment.
