Question:
Hi, I'm a 47 year old female. Managing diabetes is new to me... I had it for a while and ignored it. I was given a warning on March 23rd of this year, in the form of a heart attack. I had to have an angiogram and angioplasty to correct the damage I'd done to myself by ignoring diabetes. Not wanting to repeat that, I am asking you for help in menu planning and diet. (Recipies are welcome!) I'm lost and confused in all of this and would appreciate any and all suggestions. Thank you!
Answer:
There are lots of people who are going to point you to recipes. I'm not one of them. I am a 58 yo male who loves to cook & eat, and I assume you like it too. But from now on, sister, the frying pan and the oven are almost off limits for you! It's the microwave and the toaster/oven for you! The way I started to get weight down and get BG under better control was to STOP COOKING! I dropped 30 lbs in the last 4 months, the first time in history I have been able to do; and my insulin requirements dropped. I eat a lot of fruit, microwave & raw veggies (often in salads with careful dressings). I make huge vats of split pea & navy bean soup, which I freeze, and pull out in smaller packages. I eat instant flavored oatmeal, bagels. and English muffins. Lots of broiled fish, seafood, and chicken. I love V8. I was 10 years old before I knew that grits 'n eggs was three words. I really miss the sausages, hams, cheeses, cream sauces, pastries and other stuff I used to eat. But all of these are DEATH PILLS for you and me now. So, try it for two weeks. Don't prepare anything that can't be cooked in the micro or the toaster-oven. Eat lots of fruit and veggies. Good Luck. I don't want to read any obits with your e-mail address in them for the next thirty years.
