Would anybody be willing to recommend a diet book to learn some basics about nutrition ?

would anybody be willing to recommend a diet book or two--preferably one all-encompassing tome--to learn some basics about nutrition ? for example, if there is a nutritionists equivalent of harold mcgee's 'on food and cooking' , which is completely fantastic, but all about, well, the chemistry of food and cooking and less of its interaction with our bodies. I've heard that 'nutrition and physical degeneration' is quite good and seems pretty interesting, but being 70+ years old seems like it'd lack a lot of the modern science's insight.

Here some a bit more modern books, which I've seen been recommended by some well informed people, or which I personally find interesting: Introduction to Nutrition, Exercise, and Health. 4th edition. Frank I. Katch,William D. McArdle
