For business like nutrition, I like Food, Nutrition and Diet Therapy by Krause, an old book, but one used at least at the time by Johns Hopkins University. Sure, there are newer, more up-to-date ones. But, hey, we don't need to re-invent wheels--and so much of this is cyclical that the new often is the old in a different wrapper.
