What text or book on food nutrition diet therapy would you recommend as providing a solid educational background and foundation for a person who has never formally studied nutrition or any natural science beyond the introductory course stage? The objective is to learn the basics, learn the current theory, and to become informed about current issues, studies and trends

Answer:

For business like nutrition, I like Food, Nutrition and Diet Therapy by Krause, an old book, but one used at least at the time by Johns Hopkins University. Sure, there are newer, more up-to-date ones. But, hey, we don't need to re-invent wheels--and so much of this is cyclical that the new often is the old in a different wrapper.
