I am looking for a definitive book on nutrition. got any to recommend on williams basic nutrition and diet therapy?
Answer:
I use this for my classes with seniors and dietetic interns. The nice thing about it is that it includes the basics of vitamins, minerals, protein, carbs, and fat (for the students who sold back their basic nutrition texts) along with the medical nutrition therapy. I recently looked at Sue Rodwell Williams's latest edition (Nutrition and Diet Therapy), but it was a more superficial volume than Krause. For a more general book, I'd also recommend Present Knowledge in Nutrition (7th ed), published by ILSI Press. I received that just in time to use some of the info on selenium and fluoride in the advanced nutrition class I co-taught last year.
