I find myself, using the South Beach diet as a guide and kind of going my own way. We are still very careful about what we eat, but we dont follow their menu suggestions. For instance, we have added mock crab to our diet much more often. You know that stuff from Louis Kemp and such, that is made from white fish, and made to look and taste like crab. Extremely low in fat, and sugar. And tastes really good. As a matter of fact, just a few minutes ago, I took a crab quiche out of the microwave. It really tastes yummy. Also, we don't particularly like Canadian bacon, so we use turkey bacon instead. We don't eat beef at our house, and I have had to find other things to serve in its place. Can you share how you have changed the South Beach diet menu to fit your life?
Answer:
I probably use a lot more deli sliced turkey, hamburger and beef than they call for. And do far less cooking than the online menus would suggest. Various forms of omelet, frittata, or quiche are good for us. And any kind of vegetable pizza we both like. Sliced eggplant or Portobello mushrooms or zucchini grilled and topped with pizza sauce or pasta sauce and mozzarella cheese and parmesan. About two night a week we have a great big salad with canned tuna or salmon or cold meat on it plus blue cheese or feta cheese, etc. Its my lunch the next day too. When I grill hamburger patties for the boys, I do extra to keep in the refrigerator to heat in the microwave. Sometimes I just have to have beef. I cut apples up in the morning and keep them cold for everybody. I slice them into a bowl with a little water and fruit fresh so they won't turn brown, then drain them and leave them in the fridge. There are always cheese sticks and peanut butter available. And usually a bowl of raw nuts on the counter. I need to start keeping hard boiled eggs handy again as well.
