Question:
My wife and I have been doing the South Beach diet and it works great, particularly for me since I am a Type II diabetic. However, the recipes in the book are expensive and not that easy to make. It worked out for us because I have not been working the past couple of weeks and I could make breakfast, pack my wife's lunch and snacks etc, all following the South Beach recipes. Well, I'll be going back to work and and won't be so easy anymore. Can you suggest to me some recipes that we can follow and that are compatible with having a job?

I bake some chicken breasts on the weekend and make chicken salad (mayo, celery, green onions and sugar free relish-- Mount Olive makes some with Splenda) to keep in the fridge, as well as whipping up sauces to go on them (I'm still tinkering with a version of my green chili/sour cream sauce; I'll post it when I'm pleased with it). I also keep omega-3 eggs boiled in the fridge, for making egg salad.
