DH was just told yesterday that his good cholesterol is too low and the bad is high for the second year in a row. (last year was only a little high..). the doc told him to diet and exercise. So, as the one who usually does the cooking here, I have no clue about low cholesterol recipes. If you are on a low cholesterol diet, how many grams of cholesterol are ok in 1 meal? I was looking on the internet for recipes, but was unsure of the limit of the grams.. If you have high cholesterol, at age 27, then probably not too much damage is done with clogged arteries, right? Anyone give me some advice about low carb low cholesterol diet.

Here are some ways to cook low cholesterol meals. Also, you can buy the American Heart Association cookbook, which is very good. Basically, you want to avoid butter with cooking. Use vegetable or cooking oil instead for frying, etc. Take the skin off chicken. If you have red meat, have smaller portions, and cut off the fat BEFORE you cook it (if you do it after, some of the fat has already melted into the meat). You can substitute chicken broth mixed with a little oil for sauces such as scampi sauces, that kind of thing. Buy the lowest fat meat you can get (93% fat free) though it's a bit more expensive and dries out a little more, so you cook it less. You can try things like low fat sour cream or Promise butter on mashed potatoes, or even salsa. There are lots of lower cholesterol butter type spreads out there. Switch to 1% or even skim milk if DH will tolerate it, or you can mix half 2% with 1%. Hope those ideas get you started.
