Hi, I realize this is not truly a vegetarian question, but I would prefer Vegetarian responses (eggs, dairy, fish ok!). I have checked out about 20 low fat/light cookbooks from the library and tons of the recipes proudly boast 29% fat calories, and often 9-15 grams of fat per serving! Can anyone post me some really good low fat low cholesterol diet recipes (fat less than 5 grams per serving, and with less than 20% fat calories)? Or good cookbooks that fit this? Thanks!

Yes, it's a bummer. You see shelves and shelves of lowfat cookbooks, but there are barely any very low fat ones. I have a long bibliography of lowfat cookbooks with one small section devoted to the very lowfat ones. I've included that section at the end of this post. I've denoted the cookbooks that are vegetarian, but all of them have significant vegetarian sections. Some of the books are diet plans, but they do have recipe sections. In particular, Ornish's book has an *excellent* recipe section written by America's top vegetarian/whole foods chefs. My recommendations would be: Ornish, and any of the Roth and Pritikin books. McDougall is OK, but some of their recipes are horrid (it's hit and miss with them). Aw heck, I'll just put an asterik by my picks.
