Could it be that anyone here can help with kosher dessert recipes for the South Beach Diet?

I've bought the book about the South Beach Diet, but a lot of the recepies contains shrimps (lobsters also I think), bacon, ham ... and a milk dessert after dinner. Well, not exactly kosher. Could it be that anyone here can help with dessert recipes for the South Beach Diet?

Answer:
I understood the issue. I just meant that you weren't being specific enough regarding what style of dessert you wanted to create. Searching for an ice cream substitute for an ice cream pie is a lot different from searching for a milk substitute to bake a cake. If you want to make a dessert that calls for ricotta, crumbled tofu is a perfect substitute. Crumbled tofu (ricotta substitute) also goes well in a fleishig lasagna. Trouble is, I have been unable to find anything pareve to approximate the mozzarella. There are vegan cheeses available, but for whatever reason, they never seem to carry a hechsher. BTW, the Tofutti company also makes pareve cream cheese (Better than Cream Cheese) and sour cream substitutes (Sour Supreme), if these are available in your country.
