Question:
My wife and I have been doing the South Beach diet and it works great, particularly for me since I am a Type II diabetic. However, the recipes in the book are expensive and not that easy to make. It worked out for us because I have not been working the past couple of weeks and I could make breakfast, pack my wifes lunch and snacks etc, all following the SB recipes. Well, I'll be going back to work and and won't be so easy anymore. I need some recipes, suggestions etc that we can follow and that are compatible with having a job

I bake some chicken breasts on the weekend and make chicken salad (mayo, celery, green onions and sugar free relish-- Mount Olive makes some with Splenda) to keep in the fridge, as well as whipping up sauces to go on them (I'm still tinkering with a version of my green chili/sour cream sauce; I'll post it when I'm pleased with it). I also keep omega-3 eggs boiled in the fridge, for making egg salad.
